I made a fantastic risotto myself the other night – Chanterelles and Oyster Mushrooms with red wine. I happened to have turkey stock, but veggie would have been good.

So ironic – I was going through my recipes on Saturday night and took out the carrot risotto because I haven’t made it since last winter. It was a great way to get carrots into N since he won’t eat them otherwise!
