Chive Blossoms, Revisited

I had a lingering bunch of chive blossoms to use up this past weekend, so they went in our first “One Local Summer” Sunday brunch (more on that later).

Recipe: Chive Blossom Baked Eggs

Ingredients

  • 3-4 chive blossoms, individual flowers plucked from stem
  • 4 eggs
  • 1 c milk
  • 2 sausage links (used Sweet Virginia sausage)
  • 1/2 c cheese (used mozzarella)
  • salt + pepper

Instructions
Crumble and brown sausage over medium heat. Whisk together eggs, milk and cheese.  Add sausage, season with salt and pepper and gently stir in chive blossoms. Pour into lightly greased shallow baking dish and bake at 375* for 25 minutes, or until eggs are set. Topped with chopped chive stems.
